The Story

We Built a Night, Not Just a Venue.

A great night out rarely stays in one room. It starts with dinner, picks up over a cocktail, and ends somewhere with a view. Encore stacks all three inside the Hippodrome, a Waco landmark with more than a century of show nights behind it.

Executive Chef Cayman Colunga leads the kitchen, sending elevated Southern plates to every floor, and the bar program gets the same attention. Old building, new energy, and a welcome that carries from the front door to the roof.
