Each course lands with a measured pour and a story from the pitmaster and our whiskey lead, from a rye washed with toasted pecan to the barrel pick that never reaches the shelf.
Twenty four seats, one seating, seven o'clock sharp. Tickets cover all five courses and pours, gratuity included. They usually go inside a week.
The smoker sets the menu. The shelf answers it. We just take notes.
